Eli Anne Sundset is this year’s Festival Chef

Årets Kokk candidate Eli Anne Sundset is the Festival Chef at Trøndersk Matfestival 2025 and will be on stage all Friday to deliver an exciting, flavorful, and educational stage show.

— Eli Anne was the Festival Chef in 2024, together with Håvard Werkland and Fredrik Totland. She made a big impression - not only as a chef but also as a vibrant and skilled communicator. There was no doubt about who we wanted to ask to host the program at our brand-new stage area. Luckily, she was just as excited as we were, says Sondre Biltvedt, leader of Trøndersk Matfestival.

Eli Anne is currently busy preparing for the Årets Kokk (Chef of the Year) competition, but she has thankfully made time to run the stage show for a full day at Trøndersk Matfestival. On Friday, August 1, the entire stage program will focus on fish and seafood, with Eli Anne as the host.

— It’s going to be incredibly fun to run the stage for an entire festival day at Trøndersk Matfestival. I’ve been given free rein to do what I enjoy and to invite good friends to help create a spectacular show, says Eli Anne.

She has invited exciting chefs she’s gotten to know throughout her career to join her on stage, entertaining the audience with various competitions, challenges, and workshops. Eli Anne’s stage program starts at 12:00 on Friday, August 1.

12:00 Seafood Day with the Festival Chef
Festival Chef and Årets Kokk candidate Eli Anne Sundset takes over the stage for a full day focused on seafood, exciting flavors, and outstanding culinary skills.

Eli Anne Sundset

Eli Anne Sundset is from Leksvik and currently works at the restaurant Tollbua. She also has previous experience from To Rom og Kjøkken. In 2023, she was named Young Chef of the Year, which qualified her to compete in Årets Kokk 2025, taking place on September 23 in Stavanger.

Eli Anne was also part of the team supporting Håvard Werkland when he placed third at Bocuse d'Or Europe 2024, held in Trondheim.

What will chef Fredrik Totland manage to whip up using a box of ingredients he hasn’t seen beforehand?

Fredrik Totland

Fredrik Totland is from Sørli in Lierne and currently works at Søstrene Karlsen. He has previously worked at both Britannia and Le Bistro. He was part of Håkon Solbakken’s team during Årets Kokk 2023, and he has won the Nordic Championship for apprentice chefs as well as the Asko Servering Trondheim Cup.

Fredrik developed an interest in cooking at a very young age—he received his first chef’s jacket at just ten years old and even opened a food truck in Lierne when he was 15. He has also helped develop and co-owns the food truck concept LiVERTEN.

Ingrid Aas and Kristoffer Eggan, Kombo
Two chefs – the same ingredients. Who can create the best dish under pressure? A jury selected from the audience will taste and decide the winner.

Kristoffer Eggan

Kristoffer Eggan began his culinary career at the restaurants Røst and Spontan in Trondheim. A key milestone in his career was the reopening of the legendary Britannia Hotel and Speilsalen, where he was a central part of the team working toward earning a Michelin star.

After that, he gained experience at international Michelin-starred restaurants such as Frantzén and Sushi Sho. Back in Trondheim, he played a key role in the opening of Tollbua, and today he is the head chef at Kombo Restaurant.

Ingrid Aas

Ingrid Aas is from Steinkjer and currently works at Kombo Restaurant. She began her career as an apprentice at Britannia Hotel and later worked at Spontan Vinbar/Saga Restaurant.

During her apprenticeship, she participated in various competitions and has since served as a judge in apprentice competitions after becoming a certified chef.

Fish is one of Norway’s most important ingredients, and it’s also healthy and delicious! Thorvald will show you simple ways to prepare great fish meals in a busy everyday life.

Thorvald Nørsett

Thorvald Gabestad Nørsett is from Byneset and currently works as a Sous Chef at Skjolden Hotel. He has previously worked at Apostrophe Omakese in Oslo, FAGN, and was an apprentice at LeBistro.

Thorvald was named Culinary Talent of the Year at KokkeCampus in 2021, placed second in the Trondheim Cup for apprentices and the Tine Matcup, and has also been part of Christoffer Fallet’s competition team at the Norwegian Culinary Championships as well as part of Eli Anne Sundset’s winning team in Young Chef of the Year.

Chef Rune Sandø shows how to make the perfect everyday meal using snow cod from Norcod. Cooking fish for dinner doesn’t have to be complicated or time-consuming.

16:15 One Ingredient – Three Flavors
Håkon Solbakk, Speilsalen
Håkon Solbakk will be challenged to create three different dishes from the same ingredient. A jury selected from the audience will taste and judge the dishes to decide which is the best.

Håkon Solbakk

Håkon Solbakk is from Nærøysteine in Nord-Trøndelag and is the managing director of the Michelin-starred restaurant Speilsalen at Britannia Hotel. He has extensive experience in the restaurant industry and is a former Nordic champion in culinary arts, as well as having been a member of the Norwegian national chef team for six years.

Solbakk’s food philosophy is based on Norwegian ingredients rooted in the Nordic kitchen, with influences from both French and Japanese gastronomy.
