In collaboration with Nidaros Pilegrimsgård, we invite you on a unique and sensory journey along Europe’s most important pilgrimage routes – from Santiago de Compostela, through Rome and Jerusalem, and finally to Nidaros. This is a journey through food and culture, served as a multi-course lunch at the pilgrim’s final destination. Drawing inspiration from places along the pilgrimage route, Renée Fagerhøi and Thomas Borgan take you on a culinary adventure. Course by course, they blend traditional dishes, ingredients, and cooking techniques from the pilgrims’ destinations with local Trøndelag flavors and storytelling. Southern European influences meet Nordic roots – all culminating in Nidaros and the celebration of the 20th anniversary of the food festival. Throughout the meal, Nidaros Pilegrimsgård will share the story of the pilgrims who carried ideas, herbs, flavors, and philosophies between south and north. You will be taken on a thousand-year journey of cultural exchange and shared human experience – accompanied by musical interludes and vivid storytelling. And it all takes place where the pilgrims once arrived: at Nidaros Cathedral, in the heart of Trondheim.

Norwegian apple cider has seen tremendous development and growth over many years, and now production is also gaining momentum in Trøndelag. Yngve from Inderøy Mosteri will share insights on what it’s like to grow apples in Trøndelag, what it takes to produce apples of top quality for cider making, and present some of his own flavors. Ulrik from ØX will talk about the cider production process - from apple juice to finished product - what makes Norwegian and Trøndersk cider unique, and present different cider styles.
